Pan-Pals Share Passover Fare

Once the Seders have passed, here are some terrific recipes that my “pan-pals” from near and far have shared. They’re great for a family meal or if you are expecting guests.

If you’re looking for ways to use up that leftover Charoset or need ideas on what to serve for breakfast or as a snack during Pesach, look no further. Try these terrific muffins made with leftoverCharoset. The recipe originally came to me via my friend Bev Steinberg of Toronto. When I asked Bev what they tasted like, she said, “I’ve never made them, but here’s my friend Ruth’s phone number. I got the recipe from her and she’s quite a balabusta! Just ask her and she’ll help you.”

All A-board the Magical Matzoh for a Memorable Meal!

Passover is just around the corner, bringing with it the annual challenge of what to prepare for the Seders and everyday Passover meals. The decision of what to serve each year is always a dilemma. I have several friends who are extremely organized. They keep copies of their menus in a special Passover file so they have a record of the dishes that their family and friends enjoy, along with comments like “Uncle Jack loves my sweet and sour meatballs, but cousin Sarah has decided to become a vegetarian!”

SHEILAH KAUFMAN’S MEAT AND LEEK PATTIES
(Kifticas de Prassa, Keftikas de Puero)

Second stop of the Magical Matzoh Progressive Passover Dinner Tour is Potomac, Maryland, at the home of Sheilah Kaufman. Sheilah has authored 22 cookbooks and will have two new books out this year. She proudly says that “fearless, fussless, easy, elegant” cooking is her trademark. (This is also the name of one of her more popular books.) According to Sheilah, her recipes have to be able to be made ahead or frozen, with a short preparation time, and have to taste fabulous. She loves to share her recipes and love of cooking with friends and family. When she visited me a few years ago, she completely took over my kitchen and cheerfully prepared some of her scrumptious specialties for us. You can be sure that she will always be a welcome guest in my home!
