4 cups flour
2 eggs
pinch salt
1 cup water

Combine all ingredients, adding water slowly. Knead until smooth and elastic, and roll out on a well-floured board or white tablecloth, to 1/4″ thickness. Cut in 4″ circles. Place a teaspoon of filling in the centre of each circle and close by crimping edges together firmly. Boil in salted water for 20 – 25 minutes, until they rise to the top.

Yield: about 5 dozen.

Suggested Fillings: Potato, Kasha, Cherry, Blueberry. (Make double the quantity of filling for Potato Varenikas).
