Gefilte Fish 2

2 onions, sliced
2 carrots, sliced
1 qt water
2 tsp sugar
2 lbs minced fish
4 eggs
2 tbsp bread crumbs or matzo meal
1/4 cup cold water
2 grated carrots
2 grated onions
1/2 tsp sugar
1 tbsp salt
pepper, to taste

Place sliced onions, carrots, water, and sugar in a large pot and bring to a boil. Combine remaining ingredients and blend well in electric mixer. Moisten hands and shape fish into plum sized balls.

Drop into boiling stock. Partially cover pot and simmer for 2 hours. Serve hot or cold.

Makes 12 servings.
