4 eggs, separated
2 tsp. sugar
2 tbsp. cold water
rind of 1/2 lemon
1/4 c. potato flour
1/2 tsp. salt
Beat egg yolks until light. Add sugar slowly, beating until light and creamy.
Add water and grated rind. Slowly sift in potato flour.
Beat egg whites with salt until stiff, and fold into batter.
Fill greased muffin tins half full and bake at 350F for 12 to 15 minutes.
