Passover Bagel

Bread Bagel Rolls Muffins

Yield: 1 dozen

1/2 c. oil
2 c. water
2 c. matzo meal
1/4 tsp. salt
1-2 tbsp. sugar
5 eggs

Boil oil and water together. Add matzo meal, salt and sugar. Remove from heat.

Stir until liquid is absorbed. Cover and let stand until cool.

Add eggs one at a time. Beat until light and fluffy.

Drop from a spoon onto a lightly greased pan. Make a hole in the centre of each one.

Bake at 400F until light brown, about 50 to 60 minutes.
